Honey Goat Cheese Salad Dressing

This is my all time favorite salad dressing.  Its the best!!!  And added bonus:  its healthy!!  One tablespoon is only 43 calories and 3.4 grams of fat.  But to be honest, I could care less about the nutrition information, when it comes to this dressing, its the flavor that I care about!!  Goat cheese and honey go hand in hand like peanut butter and jelly, like Gwen and Gavin, like Mony Mony and wedding get the idea.  Its good.  Real good.  This recipe came from Gina over at SkinnyTaste.  She turns your favorite recipes into weight watchers appropriate recipes.  I've tried tons of her recipes, and everything has been delish!!  So here it is, now go make it!!

Honey Goat Cheese Dressing
Gina's Weight Watcher RecipesServings: 15 • Serving Size: 1 tablespoon • Old Points: 1 pt • Points+: 1 pts Calories: 43.1 • Fat: 3.4 g • Protein: 1.4 g • Carb: 2.0 g • Fiber: 0.0 g • Sugar: 1.8 gSodium: 28.3mg Ingredients:
  • 4 oz fresh creamy goat cheese, room temperature
  • 1 1/2 tbsp honey
  • 2 tbsp extra-virgin olive oil
  • 2 tsp apple cider vinegar
  • 1/2 lemon, juiced
  • 1 tbsp water
  • Kosher salt and freshly ground black pepper

Directions:In a small blender, combine goat cheese, honey, olive oil, vinegar, lemon juice, water and season with salt and plenty of freshly ground black pepper. Mix until fully combined and creamy.
